Our West of Kentucky Bourbon is a nod to those who have crafted this American spirit before us, paying homage to it’s heritage while embracing a distinctly Californian approach. Available for a limited time every year and through a series of formulaic releases, we use traditional techniques to re-imagine what a bourbon can be, creating a smooth, flavorful experience that can be enjoyed neat, on the rocks, or in your favorite bourbon cocktail. For 2015 we present Formula Number Two – this wheated bourbon combines yellow corn, grown in the heartland of America, wheat, and malted barley. From here, we rely on the same methods used by 16th century distillers and embrace the small inconsistencies that many other whiskies avoid. There is no forced rectification through plates and the pot still is set over an open fire, which promotes high flavor over high alcohol and showcases the depth of this group of grains. The distillate is barreled in small casks for over a year, working with first new and then used barrels to soften and tone the already well-rounded spirit. Combined with the daily coastal variations of Sonoma County’s climate, we refine our spirit to bring forth a smooth, full flavored bourbon, with background notes toasted vanilla, almond, toffee brittle, and coffee. The product of our intelligent, hard working team who proudly ignore modern trends to pursue a new legacy steeped in the old ways, our West of Kentucky Bourbon series follows in the unyielding footsteps of our distilling forefathers while combining the intuitive nature of California.
